Omotenashi

Above all, Koju is a space of intentional hospitality. We invite you to relax, savor each bite, and embrace the once-in-a-lifetime encounter that omakase represents.

Experience

Omakase means “I leave it up to you.” Trust in the chef’s journey — each course is crafted in a specific progression.

Please refrain from requesting substitutions unless you’ve notified us of allergies in advance.

Avoid adding soy sauce, wasabi, or condiments unless offered — each piece is seasoned intentionally.

We recommend eating each piece immediately to enjoy optimal temperature and texture.
