Etiquette & Table Manners
Omotenashi
Above all, Koju is a space of intentional hospitality. We invite you to relax, savor each bite, and embrace the once-in-a-lifetime encounter that omakase represents.
Experience
Omakase means “I leave it up to you.” Trust in the chef’s journey — each course is crafted in a specific progression.
Please refrain from requesting substitutions unless you’ve notified us of allergies in advance.
Avoid adding soy sauce, wasabi, or condiments unless offered — each piece is seasoned intentionally.
We recommend eating each piece immediately to enjoy optimal temperature and texture.
Reservations
Due to limited seating, all reservations require a credit card hold.
Cancellations within 24 hours are subject to a cancellation fee.
No-shows and late cancellations may forfeit the full cost of the experience.
Allergies & Dietary Restrictions
We do our best to accommodate allergies and dietary needs with advance notice – please let us know all allergies you or members of your party may have when making the reservation.
Unfortunately, we cannot accommodate vegetarian/vegan, same-day restrictions or preferences.
Children & Group Dining
Koju is an intimate culinary experience best suited for adults and older children who can fully participate. Please contact us directly for private or group bookings.
Phones
We ask that you silence your phone and refrain from calls or video during the meal to maintain the intimacy of the setting.
